Gluten Free Carrot cake
2 cups sugar
1/2 cup oil
1 cup unsweetened applesauce
4 eggs
1 tsp salt
2 tsp baking soda
2 tsp cinnamon
2/3 cup potato flour
2/3 cup brown rice flour
2/3 cup tapioca flour
2 tsp gluten free vanilla
3 cups shredded carrots
½ cup walnuts optional

Mix in order given and bake at 325.
Takes approximately 45 minutes in a 9x13 pan
The flours in the recipe can be found at some larger grocery stores. Super Targets carry some. If none in your area do you can try health food stores or buy online.
It works best with the combination of flours but will work fine with potato and rice flour if you can't get the tapioca. You can also substitute white rice flour if you can't find brown.
Don't use the same mixer for this that you use regular flour in. Flour can get into cracks and crevices in mixers and drop into the batter.
