Another White Cake

I found this recipe sometime back on the internet and have played around with the recipe. It is really good, very moist, bakes really level and freezes well. Don't let the surprise ingredient alarm you....you can't taste the apple sauce at all....but it contributes great moisture to the cake.

For convenience I purchased those little 1/2 individual portions of apple sauce [store brand 6 for 99 cents].



Buttermilk White Cake II


3 cups cake flour, sifted

1 teaspoon baking powder

½ teaspoon baking soda

½ cup butter at room temperature

¼ cup shortening

2 cups sugar

1 tablespoon vanilla

4 egg whites or 2 whole large eggs

1 cup buttermilk

½ cup applesauce

1/3 cup oil

1. In mixing bowl, sift together cake flour, baking soda, baking powder and sugar. Set aside to be added later.

2. Add butter and shortening and mix on low until mixture resembles fine crumbs.

3. Add buttermilk, oil and vanilla. Mix on low until combined, then at medium speed for two minutes.

4. Add egg whites [or whole eggs] and applesauce. Mix on medium two more minutes.

5. Pour in to 3 8” greased and wax paper lined rounds or 1 9”x13” pan.

6. Bake 20-25 minutes for the rounds, 30-35 minutes for 9”x13” pan. Cake will spring back when lightly touched when done.
