I have used leftover cookies for pie crust. I just crush them and roll them out with a rolling pin until they are the consistency of graham cracker crust pie crust or you might be able to use a food processor - then add a bit of butter, perhaps a bit of sugar to hold it together and press into your pie pan - add your filling and viola, you've used the ccokies!!
