I keep some in the freezer nearly all the time. Just be sure to keep it covered while it thaws so moisture doesn't condense on it and water it down. If I'm in a hurry, I thaw it in the microwave at 30% power for a few seconds. Freezing doesn't affect the taste or texture at all. As far as keeping it a room temp., I covered a cake in it just for my family once, and it was fine for the entire 4 days it took us to eat it all. I just kept it under a glass cake dome at room temp until it was gone.
: Not real familiar with Ganache. If I make it ahead, can it be refrigerated or frozen? Does it keep for any length of time on countertop?
