I am familiar with the Caramel Icings that start with butter and brown sugar, and actually kid of "firm up" like fudge on a cake.
I've been asked to make an Applesauce Spice Cake with apple filling (the pastry type filling in sleeves that Sugarcraft sells), and thought a Caramel Icing would be nice, but I wanted a lighter, fluffier version. Haven't been successful finding one. Any recipes or suggestions would be appreciated.
