How about Seafoam Frosting? You could add a bit of caramel flavoring to enhance it a bit if you like.
2 large egg whites
1 1/2 cups brown sugar, packed
1 dash salt
1/3 cup water
1 teaspoon vanilla
Combine egg whites, sugar, salt and water in top of double boiler; place over rapidly boiling water and beat at high speed for 7 minutes or until mixture will stand in stiff peaks.
Add vanilla and beat until thick enough to spread.
: I am familiar with the Caramel Icings that start with butter and brown sugar, and actually kid of "firm up" like fudge on a cake.
I've been asked to make an Applesauce Spice Cake with apple filling (the pastry type filling in sleeves that Sugarcraft sells), and thought a Caramel Icing would be nice, but I wanted a lighter, fluffier version. Haven't been successful finding one. Any recipes or suggestions would be appreciated.
