I make my doctored Italian Cream out of one white cake mix and one coconut cake mix (Duncan Hines). I substitute buttermilk for the water amounts of both mixes, then proceed as normal for the oil and eggs. Whenever a bride asks for Italian Cream, I ask whether she wants the coconut flakes and pecans or not. If so, I add these to the above ingredients, and if not, I do not. The cake still has a hint of coconut in it from the mix, but not full blown coconut taste, due to mixing it with the white cake. I get rave reviews for this cake flavor and usually have offer it at bridal shows.
