I bought some vintage cake books on ebay, and found this recipe in an old Wilton Celebration magazine. It's called Nippy Lemon Filling. In a pan, mix up 3/4 cup sugar, plus 1/3 cup cornstarch, 1 tablespoon lemon zest, and 1/4 teaspoon salt. Add 1 1/2 cups water, 1/4 cup lemon juice, 1/2 teaspoon butter flavoring, and yellow food coloring.
Cook over medium heat, stirring CONSTANTlY until it is thick and clear. This will fill a 1/4 sheet or a 10 inch cake. Very tasty!
