I've only made ganache once but used a better grade of chocolate - like Merkins so my guess would be that Nestle's is mixed with something else that isn't agreeing with your recipe and Giardelli has more chocolate in it and possibly less filler????

Everytime I use Nestle Chocolatier 60% morsels for ganache I end up with a mess. If I use my standby Giardelli ,, perfect What am I doing wrong and what can I do to salvage not waste this large amount of chocolate?
