I make this for my neighbor who is diabetic and she has no problems. I use sugar free pudding and sugar free cool whip and Splenda. I had one customer last week who is diabetic and he told me that he had three pieces for breakfast and it didn't hardly change his readings. I am always trying something new for my neighbor next door she is a sweet old lady,
This sounds great! I am on the borderline of diabetes and always looking for ways to get my sweet fix without too many carbs or sugar!
: I have sold 9 of these pies in one day. You can also sub sugar free pudding and splenda for diabetics.
1 graham cracker pie crust
1 pint fresh strawberries sliced
1 pint whipping cream
1 small box instant vanilla pudding
4 ounces light cream cheese
1/4 t. real vanilla
1 ounce tub light or fat free cool whip
2 T. sugar or splenda
Cream together cream cheese, vanilla and sugar. Fold in 1 1/2 cups Cool whip set aside. In another bowl whip cream and pudding until stiff peaks form set aside. Place cream cheese mixture in the bottom of the pie crust and top with sliced strawberries. Top with vanilla mousse. Top with remaining Cool whip. Enjoy!
