That sounds yummy! I have a question though, Do I leave the segments whole or cut them up? Also, Since the cakes have some sculptures that are going on top of them (he is retiring from chevy so I am doing a 1961 corvette and a 2008 corvette on the end cakes) would you put the orange liquor in the icing? Thanks for the idea!
: What about a mandarin orange cake. Yellow DH box mix, one can of mandarin oranges (small can), eggs and oil called for on the box and if needed, add a small amount of water, sometimes its needed sometimes not. Then fill the cakes with icing and more orange segments that have been drained to within an ounce of their lives (I put mine on a lot os paper towels and press down), then drizzle an orange liquor over each layer. They'll LOVE it.

I am doing 3 10" square cakes for a retirement party and they are each a different flavor. One is chocolate with vanilla bc, one is white with vanilla bc and they want the third to be Orange. I cannot find a good recepie and thought I would put it to you all. Also, what icing would you do on it? Almond or something the same as the other 2? I can do Chocolate on the Chocolate cake to set it apart. I thougth maybe a vanilla bc flavored with Grand Marnier (sp?) Please help. It is for next week. Thanks!
