So sorry, there is no way. Strawberries are just one of those fruits with a short shelf life. I guess the only way would be to choose those that are a little under ripe or less cranberry in color and more redish/orange but those are usually the less tasty and harder. Doing them last minute is the only safe way.
: Does anyone have a secret to keeping chocolate covered berries from weeping? I've done them lots, but I do them early the morning of the event and sometimes, some of them still weep. I have 200 to do this Saturday and I'm still hunting for a way to do them and keep them from weeping. Would a light coating of parafin wax work or not? Just hunting ideas!!
