The problems lies in the sugar in the chocolate. Sugar naturally causes strawberries, as well as many other fruits, to mascerate, or, in other words, lose their juices to the outside. Short of making them last minute, I don't know any other solution.

: Does anyone have a secret to keeping chocolate covered berries from weeping? I've done them lots, but I do them early the morning of the event and sometimes, some of them still weep. I have 200 to do this Saturday and I'm still hunting for a way to do them and keep them from weeping. Would a light coating of parafin wax work or not? Just hunting ideas!!
