To be honest, I've never tried that. I know you can buy commerically prepared batters like that, but I am sure the leavening used in them is created especially for this type product. I am not sure if regular baking powder and the such would keep its leavening power after refrigeration/freezing. The best way to find out is to experiment with it and see if the results are acceptable.
: does anyone know if you can make the batter for a tray
of brownies or coffee cake, prepare it in the pan, and
then refrigerate and bake it the next day ? I've
never tried this, and it would save me a lot of time
