I did a little research when asked to make a cake for my diabetic neighbor. I talked to a dietician at my hospital and she told me that diabetics can have cake it's the frosting that they have trouble with. I make a diabetic frosting out of whipping cream, sugar free instant vanilla pudding, sugar free cool whip and a dash of real vanilla. In a bowl whip together 2 cups heavy cream,small box sugar free vanilla pudding, vanilla and 1/4 cup milk. Fold in 1 1/2 cups cool whip. I make a sugar free mousse for the filling by using one small box instant sugar free pudding and 2 cups whipping cream. Whip until stiff peaks. So good. Does she like pie?
