My best advice is not to overbake the cake. Any recipe will be dry if overbaked. Have you ever tried my method to test for doneness?:
Press finger gently in center of cake. If done - springs back up-barely. This is especially good when you use box cake mixes. Some scratch recipes can be a little iffy.
