I made up this mix-based recipe for a lemon wedding cake this summer, and it was a big hit. It makes one 9 x 13 sheet cake.
1 and 1/2 white cake mixes
1 3 oz. pkg lemon Jell-O
juice of 1 lemon plus water to equal the amount of liquid called for on the package of mix
(for extra moistness, substitute 1/3 c buttermilk for 1/3 cup of the water)
Finely grated rind of 1 lemon
Whole eggs (numbe of eggs or egg whites called for on the package, but use whole eggs instead of just whites.
Amount of oil called for on the mix package.
Mix as usual, adding lemon rind last. Be sure to figure the amounts of liquid, eggs, and oil needed for the extra 1/2 mix. For extra lemon flavor, add 1/2 tsp. lemon extract.
: Hi all- I am looking for a great moist lemon cake recipe for a sheet cake I am making this weekend. I usually use the wh. sour cream almond recipe and didn't know if this would work out well with a lemon mix. I am open to a doctored mix recipe or scratch. I just would love to have a great lemon recipe in my arsenal to offer my customers! THX
