I've tried many of the Cake Bible recipes and I too found them to be on the dry side. I have several good scratch recipes and bake them exclusively for weddings and other large cakes with no problems.

I previously posted the question about scratch vs. mix cakes. I've always made mixes because that's what my mom made. I occasionaly made scratch, but not a lot because the mixes were moister.

Well, now that I want to sell my cakes, I want something unique. Today I made cupcakes from a recipe from The Cake Bible. It was the devils food. My husband and I tried them and they were so dry. I followed the recipe to the tee. I think they tasted REALLY good, but the dryness was too much.

Does anyone have any suggestions for a better scratch recipe for chocolate and white cakes? I've tried a couple from the cake bible and got the same result.
